Summer’s here and our vegetable garden yields a bountiful harvest of vegetables including zucchini squash.
I love making zucchini fritters and zucchini bread, as well as quick vegetable stir fry consisting mainly of zucchini and tomatoes with Italian seasonings.
Today I found a huge 4-pounder green zucchini and decided to make this recipe.
This one’s been a family favorite and makes a great appetizer.
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients:
1 large green zucchini
1 cup all-purpose flour
2 cups Panko bread crumbs
1 tsp salt
1/2 tsp ground black pepper
3 eggs, beaten
2 cups vegetable oil for frying
3 tbsp Parmesan cheese
Tools You’ll Need:
Knife+
Cutting board
Ziploc bag
Kitchen tong
2 medium-size bowls ( 1 for beaten eggs and 1 for bread crumbs)
Frying pan
Procedure:
1. Wash zucchini and pat dry with a towel.2. Cut into 1/3 inch slices.3. Mix flour, salt, and pepper in a Ziploc bag. Coat individual slices in flour mixture. Shake off excess flour.4. Dip floured zucchini slice into beaten egg. Do this for 5 seconds on both sides.5. Coat with Panko bread crumbs and set aside. Repeat steps 1-5 until you have enough batch for frying. 6. Heat oil in a frying pan/skillet over medium heat and fry breaded zucchini until golden brown on both sides.
7. Transfer to a plate lined with paper towels to absorb excess oil. While still hot, sprinkle with grated Parmesan cheese.
8. Serve warm with your favorite dipping sauce (in my case ketchup) and enjoy your crispy fried zucchini slices!
